Hainanese Chicken Rice RecipeThe Hainanese chicken rice is one of my most preferred dishes whenever I visit a Chinese restaurant. The Hainanese chicken rice traces its origins in Hainan province, China.

However, the recipe was made popular by Chinese immigrants living overseas in places like Singapore, Vietnam, Malaysia and Thailand. Below is the recipe for preparing your favorite Hainanese chicken rice:


  • Hainanese Chicken
  • 1 whole chicken
  • Water, sufficient for boiling
  • 1 tsp salt to taste
  • 4 garlic cloves, peeled and smashed
  • 1 ginger, smashed
  • Rice
  • 2 tbs chicken fat with skin
  • 3 cups of long grain rice
  • 3 grated garlic clove
  • Water, enough for boiling
  • 3 ½ cups of chicken stock
  • 2cm grated ginger
  • 1 tsp salt to taste
  • 2 screwpine leaves, optional

Chili garlic sauce for dipping

  • 4 garlic cloves
  • 10 red chilies, fresh
  • ¼ tsp salt to taste
  • 2cm piece of ginger
  • 2 tsp lime juice
  • 2 tbs chicken stock, from boiled chicken

Chicken sauce

  • 1 ½ tbs sugar to taste
  • 1 tbs garlic oil
  • 3 tbs chicken broth, from boiled chicken
  • 5 tbs light soya sauce
  • 1 tsp sesame oil

Ginger sauce for dipping

  • 1 tsp lime juice
  • 75g ginger
  • ½ tsp salt
  • 2 tsp chicken stock, from boiled chicken
  • 6 garlic cloves

Recipe garnishing

  • Spring onion, sliced
  • Coriander leaves, fresh
  • Cucumber, sliced


1. Wash all the rice and dry on the colander. Prepare the chicken and boil the water in a fitting pot. Add the chicken, ginger, salt and garlic. Reduce heat and cook the chicken for 20 to 25 min. Allow the chicken to steep inside for another 20 to 25 min. Remove and place the chicken in a basin of cold water for about 5 minutes. Place the chicken in colander to drip dry, then cut into serving pieces.

2. Set the chicken aside and prepare your rice. Begin by heating the wok, and then add water and chicken fat. Once the fat is released, add garlic and ginger, and then fry softly. Remove the chicken fat and skin and discard. Next, add dried rice and salt and stir gently for 2 min. Move the rice to an electrical pot or rice cooker. Then add chicken broth with screwpine. Boil until rice is cooked.

3. As the rice is cooking, prepare your chili garlic sauce. This is simple, just add all the ingredients into the food processor or blender and whizz. Add a little sugar or salt to taste. Prepare your garlic sauce the same way.

Finally, mix all the ingredients made for the chicken sauce and pour it over the chicken pieces. Add a little chicken broth and soya sauce if needed. Garnish the chicken together with the cucumber, fresh onions and coriander leaves. Serve your oriental delight with dipping sauce!
